Spicy Hoisin Beef Meatloaf

This meatloaf uses simple, flavorful ingredients without relying on heavy fillers. It’s also one of my favorite ways to add in ancestral-style blends like Force of Nature, which include organ meat for extra nutrients. The seasoning and sweet-spicy glaze help “hide” any stronger flavors, making this an easy and approachable way to get the benefits of organ meats without noticing them at all.

Prep Work
- Chop scallion
- Chop shallot
- Mince jalapeño (optional)
- Grate fresh ginger
- Whisk 1 egg
- Preheat oven to 350°F
- Mix the glaze (hoisin + ketchup, optional sriracha)
Ingredients
Aromatics
- 1 tablespoon avocado oil
- 1 tablespoon chopped scallion
- 2 tablespoons chopped shallot
- 1 tablespoon chopped jalapeño (optional)
- 1 teaspoon freshly grated ginger
Meat Mixture
- 1 pound 80/20 ground beef (grass-fed or ancestral blend with organ meat)
- 1 egg
- 1 tablespoon coconut aminos hoisin
- 1 tablespoon sugar-free ketchup
- 1–2 teaspoons sriracha (to taste)
- 1 tablespoon coconut aminos
- 1/8 teaspoon Worcestershire sauce
- 1 teaspoon salt
Glaze
- 2 tablespoons hoisin
- 2 tablespoons ketchup
- (Optional) 1/2 teaspoon sriracha
- (Optional) 1/2 teaspoon coconut aminos
Instructions
- Preheat oven to 350°F.
- Heat avocado oil in a skillet over medium heat. Add scallion, shallot, jalapeño, and ginger. Sauté until softened and fragrant. Remove from heat and let cool slightly.
- In a large bowl, add the ground beef and gently break it apart.
- Add the egg, hoisin, ketchup, sriracha, coconut aminos, Worcestershire, salt, and the cooled aromatics. Mix gently until just combined.
- Transfer to a lightly greased loaf pan and press into a loaf shape.
- Stir together the glaze ingredients and brush generously over the top.
- Bake for 45–55 minutes, until cooked through (internal temperature reaches 160°F)
- Let rest for 10 minutes before slicing.
